Potatoes are the main raw materials for products such as potato flakes, 澱粉, and French fries. In northern China, potatoes are categorized based on their uses into two main types. The first type is vegetable potatoes, which are sold in markets as a type of vegetable, mostly comprising Dutch varieties. The second type is processing potatoes, primarily used as raw materials for making potato flakes, 澱粉, and French fries. Commonly used varieties include Atlantic, 謝波迪, Burbank, and McCain, as well as some high-dry-matter varieties from China.
