Potatoes are the main raw materials for products such as potato flakes, 녹말, and French fries. In northern China, potatoes are categorized based on their uses into two main types. The second type is processing potatoes, primarily used as raw materials for making potato flakes, 녹말, and French fries. Commonly used varieties include Atlantic, 셰퍼디, Burbank, and McCain, as well as some high-dry-matter varieties from China.
